High-ester Jamaican fruit, molasses, and dark caramel give the Jungle Bird a vivid rum backbone.

Accessible caramel and spice provide a softer dark-rum variation that still stands up to Campari.

Navy strength and concentrated tropical funk make a drier, more forceful Jamaican variation.

  • Recipe-defining bottle

    Campari

The classic recipe names Campari, not a generic red bitter; substituting one makes a variation.

Keep the pineapple and demerara measured so Campari's bitterness stays visible

Verified technique note

Why this build works

The Jungle Bird gives bitterness enough room to register inside a tropical build. A 1½-ounce pour of blackstrap-style rum matches the 1½ ounces of fresh pineapple, so fruit supplies body without displacing the base spirit. Campari enters at ¾ ounce, a deliberate amount that remains vivid against ½ ounce each of lime and demerara syrup. A hard twelve-second shake integrates the dense syrup, aerates the pineapple slightly, and chills the mixture. Fine straining over fresh ice removes broken shaker fragments, slowing dilution while preserving the drink's red-orange color and clean bitter finish.

Common failure points

The drink reads as sweet pineapple punch with no bitter finish.
Measure the Campari at ¾ ounce and keep pineapple juice to 1½ ounces.
The rum disappears behind the fruit and fresh serving ice.
Use a full-flavored blackstrap-style rum and shake for only twelve seconds.
Measure or substitute

A molasses-rich dark rum can replace blackstrap rum at the same 1½-ounce measure, but it makes a softer variation; simple syrup may replace demerara at ½ ounce with less caramel depth.
